Agroalimentare, Univ. scienze gastronomiche Pollenzo: "Carne selvatica può essere cibo di qualità"

Roma, 9 mag. (Adnkronos/Labitalia) - “Quello delle carni selvatiche è un cibo che, se gestito bene, può diventare un cibo di qualità. I modelli alimentari che si sono creati in questi anni non sono così puliti e giusti, oggi possiamo ricostruire una nuova consapevolezza alimentare. Non si costruisce una filiera se non si affronta il problema in modo olistico: la nostra Università coordinando competenze diverse ha messo in contatto tutti gli attori per arrivare a dimostrare che le carni selvatiche, soprattutto quelle degli ungulati, rappresentano migliaia di tonnellate di cibo disponibile con valori nutrizionali, organolettici e ambientali molto alti. Tutti gli attori della filiera devono avere la consapevolezza del proprio ruolo, a partire dai cacciatori che devono diventare i primi attori della filiera. Nel manuale ci sono anche delle schede per i ristoratori che indicano le proprietà organolettiche e nutrizionali". Così Silvio Barbero, vicepresidente dell'Università di scienze gastronomiche di Pollenzo, a margine della presentazione della guida per la corretta gestione della filiera delle carni selvatiche tenutasi presso la Sala stampa della Camera dei Deputati.
