Agroalimentare, Zipponi (Fondazione UNA): "Filiera carne selvaggina è diventata risorsa"

Roma, 9 mag. (Adnkronos/Labitalia) - “Oggi inizia finalmente un dialogo con le istituzioni. Tre anni di lavoro hanno permesso di realizzare qualcosa che difficilmente viene riconosciuto nel nostro Paese, ovvero il Made in Italy. Finora la filiera di carne di selvaggina era vista come un insieme di problemi, oggi questi problemi sono invece diventati una risorsa. Il manuale spiega in modo scientifico come creare economia. E' fondamentale il dialogo, e non contrapposizione, tra associazioni venatorie, agricole e mondo scientifico. Questo settore genera quasi l'1% del Pil nazionale. Lo scopo del progetto 'Selvatici e Buoni' non è solamente quello di instaurare un circolo virtuoso tra i soggetti coinvolti, ma anche quello di delineare un processo che consenta la creazione di una filiera di carni selvatiche controllata, legale e sicura dal punto di vista igienico-sanitario, in grado di garantire uno sviluppo sostenibile e un ritorno sociale, economico e occupazionale per i piccoli borghi e le comunità alpine e appenniniche”. Così Maurizio Zipponi, presidente di Fondazione UNA, in occasione della presentazione ufficiale, presso la Camera dei Deputati, del Manuale operativo del progetto 'Selvatici e Buoni', frutto della collaborazione tra Fondazione UNA, Università di Scienze Gastronomiche di Pollenzo e Società Italiana di Medicina Veterinaria Preventiva, SIMeVeP.
